If I had a day in Hepburn Springs…

A day in Hepburn Springs is best enjoyed slowly. Grab a coffee to go from Lotte's and start the morning with a walk along the Goldfields Track, winding through native bushland and taking in the fresh country air. From there, settle in for a long brunch at Cello of course. Spend the afternoon soaking in the mineral waters at Hepburn Bathhouse & Spa before heading to The Blowhole, where the rich eucalyptus forest and volcanic landscape remind you why this region feels a world away from the city. Stop in at The Virgin Kitchen for a light lunch, enjoy a tasting at Captains Creek Organic Wines, then finish the afternoon with a cheeky beer at Hepburn Brewing Co. before heading back to refresh. For dinner, settle in at The Surly Goat or The Argus Dining Room, and if you've still got some energy left, catch a show at the beautifully restored Hepburn Palais. Better yet, make a weekend of it and stay the night, whether that's at one of The Houses accommodations, Hepburn Springs Motor Inn, or one of the many charming cottages tucked throughout Hepburn and Daylesford. After all, one day is rarely enough.

Thoughtful hospitality, delivered occasionally to your inbox

Our baristas are highly trained and passionate about their craft, working on what can only be described as a spaceship of a coffee machine, a San Remo F18, pouring the Magnum Blend from small-batch roaster Bermuda Coffee Studio, paired with award-winning Gippsland Jersey milk.

The result is coffee that's punchy yet smooth, creamy and balanced, with clean caramel and chocolate notes that linger long after the last sip. Every cup is brewed with precision and consistency, whether you're grabbing a takeaway on your morning walk or settling in for a slow brunch with friends.

At Cello, we believe great coffee has the power to make your day a little better, and that's exactly what we strive for, cup after cup.

Exceptional coffee

wholesome food

At Cello, we believe great food starts with quality ingredients and thoughtful preparation. Our menu celebrates wholesome café classics with a Cello twist, from comforting brunch favourites to hearty lunch dishes designed to delight and satisfy.

Alongside our seasonal menu, you'll find our collection of house-made jams, chutneys, relishes and preserves. Enjoy them as part of your meal, then take home a jar to continue the experience in your own kitchen or gift to a friend.

Whether you choose a cosy corner by the fire, a sunlit table overlooking the Hepburn streetscape, or a quiet spot in our pet-friendly courtyard beneath the vines, Cello is a place to slow down, gather well and enjoy simple food done beautifully.

We're eagerly awaiting our liquor licence, but in the meantime we invite you to settle in with exceptional coffee, thoughtful hospitality and the warm welcome that is the heartbeat of Cello.
